To make Koopmans Dutch Farmers cake (Boerencake)

1 pack of Koopmans butter cake
200 g butter (room temperature)
1 beaten egg (room temperature)
Springform cake tin with a diameter of 24 cm
Electric mixer with dough hooks
Preheat oven approximately 200 degrees. (180°C fan-forced).

Grease the spring form with butter/ margarine/baking spray
Use an electric mixer with dough hooks to beat the butter and add the mix and two thirds of the beaten egg.
Knead until just combined and a soft dough forms .
Transfer the dough into the cake tin. Press the dough with the back of a wet spoon in to the springform cake tin and smooth top.
Brush the dough with the rest of the beaten egg.
Draw a slanting lines in the dough with a fork to create a diamond pattern.
Bake the butter cake in the middle of the oven for about 25 minutes until cooked and golden brown.
Allow the butter cake to cool for about 1 hour before removing the cake tin
Tip add some chopped apple to the mixture or 75 g of ground coconut or 75 g of ginger pieces or 2 bags of vanilla sugar
