Met Koopmans Speculaas bak je heerlijke Hollandse speculaas. Je kunt gevulde speculaas, speculaasbrokken of kruidnootjes maken met deze mix. De verfijnde kruidenmelange geeft speculaas de heerlijke Hollandse smaak. Om speculaasbrokken te maken hoef je alleen boter toe te voegen. Wil je lekkere gevulde speculaas maken? Dan heb je nog amandelspijs en een ei nodig.

Koopmans Speculaas (spiced cookies) mix: to make Almond filled Dutch spiced cookies (Gevulde speculaas) or Dutch spiced cookies ( Speculaas )

Preparation: 

Almond filled Dutch spiced cookies (Gevulde speculaas)


- 1 pack of Koopmans speculaas mix.
- 150 g butter
- 300g of almond paste (amandelspijs)
- 1 beaten egg, 4 tbsp Water, 55 g almonds to garnish

 

* Preheat oven approximately 170 degrees. (150°C fan-forced).

* Use an electric mixer with dough hooks to beat the butter . Add the speculaas mix and 2 tbsp water to the butter. Knead on the lowest possible speed until just combined and a soft dough forms (you can also do this by hand)

* Wrap dough in plastic wrap and chill for 1 hour or until firm enough to roll.

* Grease the baking tray or use baking paper

* Mix the almond paste with half of the egg and 2 tbsp of water

* Knead the dough briefly by and divide it into 3 parts.

* Roll 2 parts of the dough to around 2 cm thickness and place on baking tray (this is the bottom layer)

* Divide the almond paste with the back of a wet spoon over the dough.

* Roll the rest of the dough to size of the form of the bottom layer and place this on the almond paste.

* Brush the pastry with beaten egg, decorate it to please with almonds and brush after one more time with the beaten egg.

* Bake the (filled) cookies in the middle of the oven in about 40 minutes or until cooked through.

 

Dutch spiced cookies ( Speculaas )


- 1 pack of Koopmans speculaas mix.
- 175g butter
- 1 beaten egg, 2 tbsp Water, 55 g almonds to garnish

 

* Preheat oven approximately 170 degrees. (150°C fan-forced).

* Use an electric mixer with dough hooks to beat the butter . Add the speculaas mix to the butter. Knead on the lowest possible speed until just combined and a soft dough forms (you can also do this by hand).

* Wrap dough in plastic wrap and chill for 1 hour or until firm enough to roll.

* Grease the baking tray or use baking paper

* Knead the dough briefly and roll to 1 cm thickness and then use cookie cutter or cut into desired shape Place on the baking tray with 3-5 cm between the cookies

* Brush the pastry with beaten egg, decorate it to please with almonds and brush after one more time with the beaten egg.

* Bake the (filled) cookies in the middle of the oven in about 30 minutes or until cooked through.

 

For something different you can always add 25 g of mixed nuts, chopped ginger or chocolate to the dough
